Campania boasts one of Italy's most elegant and refined cuisines. It's also one of the best-known worldwide, thanks to the tremendous number of Neapolitans who emigrated in the last century. Pizza, arguably the most popular food on the planet, is Neapolitan, as are many kinds of durum wheat pasta - including spaghetti - the best one is produced in Gragnano, and the red sauces (marinara, puttanesca, genovese, and so on) so many people put over them. Campania has also given us lasagna with ricotta, eggplant Parmesan, wedding soup, zesty carne alla pizzaiola, Christmas's struffoli, the Easter pastiera, and has contributed greatly to the popularity of the Seven Fish dinner on Christmas Eve.

In terms of produce the region is singularly blessed, with the slopes of Mount Vesuvius producing the San Marzano plum tomatoes that give the red sauces their richness, and there's much more too, from cauliflower through broccoli and greens to eggplant, peppers, and zucchini. In terms of meats, though there is some beef, the lamb and pork are better, and inland you'll also find water buffalo - the animals are raised primarily for their milk, which gives Mozzarella a tangy richness cow's milk mozzarella simply lacks. Not into cheese or meat? The fish you'll find along the coast is superb, and when you want to relax, what could be better than a glass of well-chilled limoncello?

In Italy, the three Ms (the Madonna, Mamma and Mangiare) are a real philosophy of life and still a force to be reckoned with. We would like you to live the same sensations with a tasty, genuinely Italian programme.
Every Italian has in his chromosomes the taste and scents of the food his "mamma" used to cook for him and he will never forget. Our itinerary will not teach you the great restaurants chefs' recipes, so complicate to repeat and far from the traditional simple Italian cookery, but they will prepare and taste dishes "locally preferred", the ones that locals want to keep all to themselves.

Paestum Country Cooking with Baronessa

Departure from your hotel on the Amalfi Coast by luxury chauffeur driven vehicle to Paestum, on the Sele Plain.

We will be welcomed in Bellelli estate, which, is principally devoted to the raising of buffaloes and horses. We will tour the farm as well as the dairy where the buffalo milk is processed into first class mozzarella. Meet the Baronessa Cecilia Baratta and start of the cooking class. The product used are all grown on their land and on selected nearby farms. They are serious food lovers and take great care in the preparation of meals, which are inspired by the great tradition of Italian cooking at its best. We will prepare a full Italian menu based on diary specialties: Homemade ravioli stuffed with buffalo ricotta cheese, Neapolitan ragout tomato sauce, fried mozzarella in carrozza, pizza and Neapolitan pastiera cheese cake. At the end of the course, you will be invited to the Baronessa lounge to have your lunch. After lunch, return to the hotel.

Buon appetito Positano is a family-run cooking class, using just fresh produce from local organic growers. This produce brings to your table the vibrant flavours of this beautiful region and is accompanied by carefully selected wines to enhance the enjoyment of the meal. These pairings will be divided into two whites and two reds, mainly from small production wineries that bring both family tradition and passion to the wine making process.

Upon arrival, you will be welcomed with a glass of exceptional prosecco, local cheeses accompanied by olive oil dips and balsamic vinegars. You will learn about the family story, their traditions and their passion for food and good wine. You will start to prepare the main course, which you will all make together on the day from fresh local ingredients. You will be invited to seat in the beautiful lush garden, where you will taste the fruits of your labour at a large rustic table overlooking the sea and Positano. Relax watching your host creating the final dish of the day, while sipping a good or two glasses of excellent wine. At the end of the experience you will have the chance to purchase any wines that you have tried or that you would like to take away with you.

The course is available for lunch (1.30 pm - 5.00 pm) or dinner (6.00 pm - 10.30 pm)

After breakfast at your hotel, leave with your guide in a comfy minivan. You will be welcomed in a delightful family's agriturismo/farm inn, set on terraces of lemon trees and vegetable and fruit gardens with spectacular hill and sea views. With the mother, you cook hands-on flavourful dishes of local, seasonal products, many right from their land, dishes that respect ancient food traditions. They also raise pigs, rabbits and chickens. When you dine on your creations on their panoramic balcony, you drink wines made from the family's grapes. Of course, you eat divine, home-made desserts, especially lemon ones! In the afternoon, drive to Amalfi, once a powerful Maritime Republic, to discover the town your own. You can add to the experience, a guide or a stop in Ravello top visit the city of the music. Retun to the hotel in the afternoon.
